Malaysian Chicken Soup
Autumn is finally here…and nothing beats a bowl of hot soup on a cold Autumn evening, especially when you’re sick. That’s exactly how Tom and I felt a couple of Friday nights ago. As with very year here, you can’t really predict how the weather will be like. Some days it’ll be cold, and some days it’ll feel like we’re still in the middle of summer. I’m just glad, we haven’t seen snow yet! I welcome, the crisp cold weather of Autumn, with it’s pretty warm colors, I like Autumn….It’s the harsh, unforgiving Chicago Winters that I dread. So, because of the unpredictability of the weather a couple of weeks ago. Tom and I managed to catch a cold, throbbing headache, sore throat and all, but being the diligent (hahaha) workers that we were, decided to still head on in to work that Friday morning. We ended up getting really... Continue Reading

I am not planning on making this recipe tomorrow (no idea what we’ll be making yet for tomorrow) for our own little cook-out, but I have made these steaks before and it’s always been a hit. So thought maybe one of you guys would like to try it out. Ingredients (serves 4) 1 tablespoon cracked black pepper Sea salt 1 teaspoon olive oil 4 fillet steaks, trimmed 20g butter, chopped 3 garlic cloves,... Continue Reading

Mushroom Chicken & Asparagus Risotto
I haven’t posted any new recipes in awhile, and since I have had a few request for this recipe, I’ve decided to post it here. Enjoy! Ingredients: Serves: 2 **If you’re using canned chicken broth to make risotto, be sure it’s low-sodium. The broth reduces at the same time that it’s cooking into the rice, and regular canned broth would become much too salty. 2 cups chicken broth, divided 1 tablespoon olive oil, divided 1 tablespoon butter 5 ounces portobello mushrooms, thinly sliced 5 ounces white mushrooms, thinly sliced 2 boneless skinless chicken breasts, cut into 1/2-inch pieces 1/2 cup... Thai Green Curry
Being from Malaysia, I have quite a penchant for Thai food. This could also be explained by the fact that most of my adolescent (high school years) years were spent living in Kedah (a northern Malaysian state that borders Thailand). Anyways…one of my favorite Thai dishes has always been Thai Green Curry. Thai Green curry (literally sweet green curry) is a variety of curry in Thai cuisine. The name “green” curry derives from the color of the dish. It can be prepared with chicken, beef or fish, but my recipe will feature chicken. Thai Green Curry 1 whole chicken, washed... Soto Ayam
Last Sunday I tried my hands at making one of my favorite Malaysian dishes. Soto Ayam. I can’t even remember the last time I had really good Soto, it must have been a couple of years ago. I know the only Soto I truly ever enjoy are the ones my mom made, and I can’t remember when that was. So that being the case and the fact that I know I can’t find a place where I can get really good soto here…I decided I would make it. Tom enjoyed it and I actually enjoyed making it. I was worried... Stuffed Sole with Crabmeat and Scallops recipe
I was asked by a new friend to post the recipe of what I made for dinner last night. Since I tend to cook a lot for dinner (cheaper than eating out everyday) and I don’t seem to have much else to write in here anymore, I think I will start writing more about what I cook. This quick, easy dish can be served with lemon garlic butter & steamed green beans for a perfect meal. Ingredients Crab and scallop stuffing and fish: 4 oz jumbo lump crab meat (1 cup) 1/2 pound bay or sea scallops 1 1/2 tablespoons... Continue Reading
